In an effort to uplift the livelihoods of local fisherfolk and promote sustainable practices in fish processing, the Poblacion Fisherfolk Association (PFA) recently embarked on a training program focusing on innovative technology for fish processing, with emphasis on the production of smoked fish, locally known as โ€œTinapaโ€.

Located in the idyllic coastal municipality of Barcelona, Sorsogon, the PFA recognized the need to adapt to modern techniques while preserving traditional methods. Hence, the training aimed to equip fisherfolk with the skills and knowledge necessary to engage in smoke fish production efficiently and sustainably.

The two-day training, held at the CFLC in Barcelona, was a collaborative effort between the PFA and BFAR-SAAD Phase II. The overarching goal was to introduce a high-quality, hygienic smoke fish product that could not only meet commercial standards but also adhere to strict safety and sanitation protocols.

On the first day of the training, participants were immersed in lectures covering essential topics such as proper fish handling, hygiene practices, food safety standards, and the step-by-step procedures involved in smoke fish processing. Stanli Yao, technical staff from BFAR-FPP, led these informative sessions, providing invaluable insights and practical tips.

The second day of the training saw theory put into action as participants engaged in hands-on demonstrations of fish processing. Utilizing 3 kilograms of sardines and 3 kilograms of round scad, the fisherfolk learned the intricacies of smoke fish production firsthand, from cleaning and gutting the fish to the precise smoking process.

One of the primary objectives of the training was to empower the fisherfolk to produce smoke fish products that meet not only local tastes but also stringent quality standards required for commercialization. By integrating innovative technology with traditional know-how, the PFA aims to tap into the vast potential of smoke fish production as a viable source of income for the community.

Moreover, the emphasis on safety standard procedures, proper hygiene, and sanitation practices underscores the commitment of the PFA to uphold the highest quality standards in their endeavors.
